Our Story

A New Chapter of Japanese Dining Culture

Behind the name SHIKI Omakase is a place where Joji Hattori expands the World of SHIKI into a new dimension — quiet, precise, and marked by a special intimacy. Together with SHIKI Japanese Cuisine and SHIKI Boutique | Sakethek, he has created a world that unites Japanese craftsmanship, Viennese elegance, and timeless refinement.

At the heart of the experience is Omakase — お任せ — “I leave it to you”. This act of trust forms the cornerstone of a dining culture in which guest and chef meet in a unique way. At SHIKI Omakase, eight guests sit at a counter where two masters craft every detail of the menu with the utmost precision and mindfulness.

The menu is not chosen in advance, but emerges from the intuition of the chefs — calibrated to the finest ingredients of the day and the dynamic of the moment. Every move is made à la minute — immediately before the eyes of the guests. Each cut, each composition, each gesture becomes part of a quiet dialogue carried by craft, experience and intuition.

The atmosphere is consciously reduced and focused on the essential. Everything is designed to direct attention to the here and now — to flavour, texture, craftsmanship, and the rhythm of creation.

Maru ni Mokkō — 丸に木瓜

The logo of SHIKI Omakase is the Japanese family crest Maru ni Mokkō — the “encircled quince blossom”. For centuries this motif has symbolised unity, perfection and balance. Like the omakase experience itself, the emblem unites tradition and the present: it preserves Japan's cultural heritage while translating it into a contemporary aesthetic.

Founder & Owner

Joji Hattori

Born in Tokyo in 1969, Joji Hattori came to Vienna at the age of eight. After an internationally acclaimed career as a conductor and violinist, he returned to Vienna in 2011 to open SHIKI — a world where Japanese artistry and Viennese refinement converge.

Executive Chef

Gerhard Bernhauer

A Vienna-born chef with a Gault Millau toque to his name, Gerhard brings decades of experience from Vienna's finest kitchens. His precision and dedication form the culinary backbone of SHIKI Omakase.

Sous Chef & Sushi Master

Ruben Gorcea

Trained personally by Japanese Sushi Master Nobuyuki Ikarashi (Sushizen Sapporo), Ruben brings meticulous craft and visible joy to every piece of Nigiri prepared at the counter.

Hiroki Takahashi

Hiroki's journey began at the Palace Hotel Tokyo's restaurant KEYAKI. After nearly a decade as Sous Chef at Restaurant Nihonbashi, he brings the highest level of Japanese sushi mastery to Vienna.

Sake Sommelier

Peter Dallinger

Combining a degree in Japanese Studies with a Sake Sommelier qualification, Peter curates one of the largest sake selections in Europe — over 60 positions, stored at -2°C for perfect preservation.
